Tonight's Recipe....

Meatloaf and Potatoes Au Gratin.

I thought I was going to be swamped with editing work tonight, but looks like I'll have some time for cooking instead! My favorite side dish since I was little is potatoes aug rotton. Since I'm growing up, it's time for my potatoes to do the same. I'm making a recipe called Cauliflower Gratin with Machego and Almonds. Guess I better figure out what Machego is before I go to the store...

And then meatloaf, thanks to Will's suggestion. No real reason, except that meatloaf is delicious and it seems to easy to cook. We'll see how it goes tonight! Still searching for the perfect meatloaf recipe - do you know the best one?

  1. Alysse! Here's my favorite meat loaf recipe - it's adapted from Rachel Ray, (p186):

    3/4 to 1 lb ground turkey (dark meat is usually cheaper and is still great)
    1 T grill seasoning
    2 t poultry seasoning
    1/3 c bbq sauce (any)
    1 small zucchini (cut off stem, etc)
    1 small red bell pepper (cored, etc)
    1 shallot (skinned, etc)
    3/4 c smoked almonds (almost one can - you can eat the rest while you're cooking)
    2 eggs
    olive oil

    Preheat oven to 425.

    Run the nuts through a food processor until ground like breadcrumb consistency. Set aside in a med bowl. Run zucchini and pepper through the food processor until finely shredded. Dump into bowl with almonds.

    Dump the turkey into a large bowl. Punch in middle to make a well. Put in spices, bbq sauce, nuts & veggies, and eggs (basically everything.) Mix really, really well. Divide up into individual servings. I like to make about 6 - 7 hamburger size patties about 1" thick. Arrange on a nonstick baking sheet. Drizzle with extra virgin olive oil. Cook for about 20 minutes.

    You can just cook 2 for dinner that night and freeze the rest for later.
